Salmon patty question???

This is the way I always make them:

1 can salmon
1 small onion, finely grated
2 tbsp fresh parsley, minced
ground black pepper to taste
2 large eggs, well beaten
1 cup dry bread crumbs plus extra for covering

olive oil for frying

Mix everything together, except the extra breadcrumbs and oil, and form into patties. Roll the patties in the extra breadcrumbs and refrigerate for about 30 munites.

Shallow fry in the olive oil on a medium heat until golden, turn and do the same to the other side.

The salmon patties I grew up with:
1 can salmon drained
1/2 sleeve saltine crackers crushed
1/2 diced onion
2 eggs

Mix everything together, form into patties and fry in oil.

This is very close to what I remeber as a kid..maybe without the onion. For sure canned salmon eggs and saltines.

And who ever mentioned the crust..that was crucial.

Never had the salmon patties but in lower Alabama we grew up eating salmon and eggs.. basically canned salmon scrambled with eggs and served over rice. Was pretty good .
 
I'll be watching this thread. I remember my grandmother making them, and stinking up the whole house. I do remember canned salmon with the bones. I tried the other day and lightly failed. They were edible, but not grandmother material.
