Holy Jesus! Why have I never seen/heard about this before!?

Smoked Bone Marrow Butter

Ingredients:
Whole head of garlic (this is hardneck garlic I harvested back in the summer
3 whole shallots
2 canoe cut beef marrow bones (these are cut into 4 pieces)
2 sticks of butter
Q-Salt (seasoned the marrow, shallots and garlic)

Smoked the beef marrow bones, smoked the shallots (sliced and a pat of butter added) and smoked the head of garlic.
This took about an hour at 275F

Puréed the smoked roasted garlic, shallots and bone marrow. Added the softened butter and mixed well.

Let the butter/marrow mixture firm up some and then rolled it up.

Now it’s back in the fridge to get to butter consistency.

When you pureed the garlic did you do the same to the shallots and how much salt did you put in the water for the ribs initial soak to get the blood out

I’m having it with a prime rib I’m doing this coming week. I did give it a taste with some bread and it’s just as delicious as it sounds.

I puréed the shallots, garlic and marrow together, then added the softened butter.

I soaked the bones in water in the fridge for 24 hours. No salt.
