Have been waiting for this and tonight seems to be the night. Only did 1 cabot. Was at Aldi earlier and found some cheese that made me think of Adams...go ahead guess :-D Had to try it. Have my amazin tube with Bear Mountain Apple and my spec out draft gauge installed on the smokestack side of the rec tec 680. Running a steady *

Good assortment of cheeses you have there. You might want to consider propping that lid open a few inches, at least until you take your first sample from the thin end of the wedges.... the tubes put out a lot of smoke.
 
Keep us posted on this. I've yet to smoke any cheese on my pellet pooper. So I'm looking for tips.

I’m going to have to try smoking my own cheese this winter.

Make smoked mac and cheese with that cheddar and Gouda! It’s delicious!
 
Good assortment of cheeses you have there. You might want to consider propping that lid open a few inches, at least until you take your first sample from the thin end of the wedges.... the tubes put out a lot of smoke.

So it's been like 2 hours and doesn't look like the cheese has taken on much smoke by looking at it. The lid was open about 2 inches now down to about 1

A little over 2 hours and headed your advice. Tried a little slice and oh ya has smoke. Now out of the smoker and wrapped up for a day or two then vacuum sealing for Christmas and Christmas gifts. A more thoughtful gift especially in these hard times.

What outside temps do you look for?

I may try that this weekend.

It gets frickin' cold at night here... may need to try my hand at this cold smokin' business.

Plenty of good threads to read on the subject.
 
I love doing this.
I actually did it late one night and fell asleep.
Thankfully, I only put enough pellets in to burn for about 2 hrs.
It was fine the next morning.
Stayed in mid-30s all night.

Color change should be somewhat small with good smoke. Test it again this morning, and if it's not quite Smokey enough, you can go back on again for round two.

I smoked some a couple weeks ago and cut into it thanksgiving... It’s gone!
 
Excellent idea! We are having a cold front here too, and would love to have some good smoked cheese ready for Christmas. Let us know how it goes.
