Red face wagu brisket

Will a Wagu brisket have Wagu written on it?
If not how will you know.

Wagyu beef's quality (marbling) is so high that it does not fit on the USDA chart. But, it can be certified by the Agricultural Marketing Service.

"LABELING
Labeling of Certified Wagyu-Kobe Beef, LLC Beef products (American Certified Kobe Beef®, Certified Wagyu Beef®, and Certified Kobe Beef®) shall be in compliance with FSIS regulations and policy guidelines, MGC Branch instructions and Livestock and Seed Program Policy Standardization Procedure 2 (LS Policy SP2; issued July 25, 2002). The labeling of Certified Kobe Beef® will only apply to beef imported into the United States from Japan in compliance with FSIS import regulations and policy guidelines, USDA import grading and certification regulations and procedures, and all live and carcass requirements of this schedule (as verified through a USDA Quality System Verification Program)."

chances are you wont stumble upon a wagyu in a market or butcher unless they are already carrying it for someone else that alredy asked for one, but the above just about covers it

A 9 pound Wagu Brisket in my area will set you back $175 big ones! Also, there are differences in Wagu. Wagu can differ depending on the marble grade. Some grocery stores sell Wagu that has a marble grade similar to Prime (which a good prime brisket runs around $90) that has a marble grade of 5 or 6. If you are buying a Wagu that only has a 6 or 7 marble rating then you might as well buy a prime with a marble rating of 5 or 6. Now if you are talking about a rating of 9 or better, that is the good stuff. If you are looking at a $100 Wagu brisket, it isn't the best of the Wagu.

One more thing... If your butcher doesn't know the marble score, then find another butcher if you plan on spending over $100 on a brisket.
