Think I am going to have a try at this when the weekend comes along. How many pounds of meatloaf mixture did you use?

Good to hear. I thought that maybe the grease rendering from the bacon might have made them greasy. Definitely going to make this. Thanks!

Sir i dont remember right off the top of my head. This cook was actually from a while back. I originally posted it on the BGE forum before i joined the brethern. When time allows, i will try to pull it up on the BGE forum and get all of the amounts and weights and post them over here. Due to working night shift offshore, i dont have much time to cook as of late. As such, i posted this cook from a while back. Again, i will gladly look it up and share the info my friend.

For the meat loaf.
3 Raw eggs.
1 large white onion diced.
1 large green bell pepper diced.
1 1/2 cup of crushed Italian Garlic buttered croutons.
1/3 cup of Worcestershire
1/3 cup soy sauce.
6 pounds ground beef. I prefer 70/30 for meatloaf. Doesn't dry out as bad.
Salt, pepper and cayenne to taste.
1 pound of Colby Jack or American or cheddar cheese. They are all excellent. Or for a real treat combine all three cheeses but you need one pound however you decide to do it.
1 pound of mashed potatoes.
I'm going to presume a few things. First that you know how to mold a hollow meatloaf. Second that you know how to make mashed potatoes. If anyone needs instructions on these I will be glad to help later tonight.
For the cook. Because it is stuffed and real dense In the center I cook these at 275 degrees for 1 and 1/2 hour to let the meatloaf firm up and "set" if you will. After 1 and 1/2 hour I bump the egg to 325 degrees for the remainder of the cook. This helps to firm up the outside as well as to crisp the bacon. If you have any questions I will gladly answer them later tonight. Hope y'all enjoy. Pics may not be in order. Sorry if that's the case. This turned out excellent my friends.

I have a good friend that makes Shepard's Pie on the smoker. He has posted several on a different forum that looked incredible. Going to give it a shot myself when time allows. The meatloaf turns out great so figure the pie will too. We shall see my friend.

Your question is not silly at all my friend. And yes, mix it in with the meat. I think that it gives it that little something extra over plain meat.

Thank you Mr. Shirley. It means a lot coming from you brother. As far as the English peas, the sky is the limit. We have stuffed them with just about anything that you can thing off. I did one with crawfish tails that was off the chain. Again, thank you my friend. Hope to see you in a couple of weeks.
