Default Pork Belly burnt end Tacos

Today I smoked some pork belly into burnt ends on my 007 UDS. I cut the belly into cubes and seasoned with Butt Rub into which I added some Habanero powder.

Applied some Cherry smoke with the 007

Added some Fiesta green chile habanero BBQ sauce, Honey, Ginger beer, copious amounts of butter and brown sugar. Covered and put back on for awhile and...

First try at home made corn tortillas

Hatch green chile

Green onions, Cilantro and cheese

ready, set....jpg

and...

Bet that was good!

But if you have a sharp butcher's knife, you may need to cut that thumb off!

Everything looks great! My tacos look like that but I use a plate and pizza cutter to round them up. Not necessary but it's just the ocd in me.

Dang that thumb looks sore, surprised I couldn't hear you from here. You would of had I done it to me!
