Cooked with RO Lump and Pecan chunks, Lonestar Glillz IVC at 250 till 122 internal temp. Reverse sear around 800-900 on the Weber..... End result was 136 finished after rest.
It looks good, but I am not sure I would say perfect... you may have to do one more test run before the big day... :-D
I will be happy to be a taste tester...
