Default Cooked for Work

on Saturday we had an event at work for 200. I cooked 16 butts and 65 lbs of chicken breasts. We had a lot of sides and a lot of excess food. Plenty of left overs.

For the butts I use a smoker that our welder made. It is insulated reverse flow vertical cabinet similar to a Humphries. I found the plans on the internet. Works awesome. It held all 16 butts nicely, 4 shelves at 4 per shelf. Cooked at 250 for 10-12 hours.

I cooked the chicken on a grill the same welder made. It is an old fuel drum turned on its side. Its great for chicken and such. Not much temp control. I light the coals on one side and put the chicken on the other side and then the last 10 minutes move them to the direct side.

I brine all my breasts dust with Oakridge rub and squirt them with Gibson's white sauce after they come out. They go over quit well.

I have never weighed it as I don't have any means to do so but I would guess it may be close to 400 lbs.

Mike, I use your products exclusively for my cooks and they work great. I thought I'd get it in the picture.
