Great video. I watched it yesterday. I need to try the butcher paper because I've always cooked my briskets naked and would like to see the difference myself.

If you go to Tulsa, I second the Burnco and Hasty Bake store recommendation. You can buy a Hasty Bake and do some cooks on it.

LOL. Yeah, she's a keeper for sure.

I am running tuning plates. They are fine. No complaints. When I first got them, the side opposite was about 20 degrees hotter than the firebox side. I tweaked them a little and now it's probably 10-15 degrees hotter on the firebox side next to the warmer. I feel certain I could get it pretty close to dead even if I wanted but I don't really care enough to relearn the pit again.

Thanks for the suggestion. I want to check out the HB headquarters when I get there. Just don't know when that will be.
