Pork Shoulder Pron
At 99c a pound, Mrs. SJ brought a shoulder home. Now that I think about it, it should have been 2 or 3. Oh well.....
Mustard Coating......South Seas Tri-Tip rub overnight. UDS with *mesquite* (should have peeked at my stores and gone to the store to get some cherry, but what the heck). Smoked to IT of 195, foiled, wrapped and stuck in a cooler for an hour. Voila!

Surprisingly good. Mesquite is my last resort in wood choice, which is why I always have it around. The trick is to not overpower the shoulder, which mesquite can do. But I got the right amount of wood in the basket.
