Given we have a Cornish Hen Throwdown going on right now, I thought I would throw my hat in the ring:

I was thinking about cooking them on the rotisserie, but decided to go a different route, as I've never seasoned Cornish Hens with Chicken Rub #2.

Chicken Rub #2 is pretty much our go to chicken seasoning, and I'll include a link to the recipe at the end of this post.



Here's the hens, each split in half:

Then anointed in mayo:

Seasoned generously with Chicken Rub #2:

When the birds finished cooking, they rested for a bit, then they went straight to the plate:

The hens were moist, and bursting with flavor, thanks to the addition of Chicken Rub #2!
