Today I cooked 2 chickens for meals during the week, and a pork loin stuffed with sausage, cheese, roasted peppers and scallions. I had hoped to take pictures of the prep, but time was not on my side. The pork loin came out good, but a little dry.

Time for gravy!
In the south, we put gravy on everything. Porl loin fits that category.
 
I just stripped the chicken carcasses, and there is going to be some good eats this week. It was very moist, and tasty. I saved the bones and skin for smoky chicken stock for jambalaya.
