About ready to do test cook. Young fresh turkey is bigger than our usual ... 19.55 lbs. I will be starting the brining or injecting process shortly since this bird is too large to spatchcock ( as previously planned ). Maybe splitting hairs, but do you seasoned Q'ers ever choose brining or injecting based on turkey weight? Relatives have high expectations and this one must be good!
