Hi everyone first time posting here. A little background, about a year ago I moved to Ecuador. Plenty of good food here, but I’ve been craving some good BBQ, and all I have found here is under cooked ribs with Jack Daniels BBQ sauce, neither of which I’m interested in trying. So last week I built an offset cinder block smoker and gave it a test run yesterday.

Lost the energy to take pics when the butt came off. 12.5 hours on that 6 pounder.

Thanks Marty, I was pretty happy with it. That was my first run moving away from electric and pellet smokers.

Great job with the smoker and cook. What wood did you use and general location? I've been to Guayaquil and Salinas.

The neighbors love to stop by and see what I’m tinkering with and talk about our 1 acre garden, sheep and chickens. Pretty sure they think I’m a crazy gringo.

We’re an hour or so outside of Quito, near a town called Palugo a semi rural area in the Andes. Wood is a bit tricky here because no one wants to give you accurate information. So to start the fire we buy hardwood scraps from a saw mill. A pickup load costs about $5. I get some pine and balsa wood mixed in occasionally but we sort out what we don’t want for cooking into campfire wood. Once the fire is started we used a mix of guava, eucalyptus, and other citrus woods.

Just noticed (on flicker), but you also preserved/created a way to cook by direct heat. I've contemplated this sort of thing and now have a guide.

Now THATS barbecue!!!

Awesome cooker and cook!!!

I am going to try to keep active on here and post most of my cooks when they happen. Which should be weekly or biweekly depending on how much time I have wrapped up in all the stuff I have going on!

What a great post and setup! I'd love to follow any posts of cooks you do on this smoker.
