Default chicken smoker.

I have this ideal ,I need something just to cook chicken on . Of course I will build it in the shop. It need to cook enough chicken for around 50 people min. What I have in mind is a pan type smoker direct heat. Will have pull our fire pans. What I need to know what depth should the cooker be how far should the coal be from the chicken can I get by without putting a cover on the cooker? I will be using wood coals in it. I need some advice or some picture.

Boy, you are going to get some good ideas on this one....One of the best all-around cookers for chicken is a Weber Kettle, although I now only own a small one for camping.......A great design

Also worth considering is an upright drum cooker, all together different from a kettle grill, but they are chicken cookin machines. In the first picture, the drumstick rack is on the lower grate.

My cousin has a chicken cooker.... hard to describe it...
The chicken is clamped between 2 grates and the grates sit about 2 feet above the coals on a frame. The frame has notches in it - one in the middle that acts as a fulcrum so you can flip the whole thing. Best chicken I have ever had. Pretty cool set up.

Check out this grill company. They have some nice ones. You might be able to get some ideas from something they build.
