My buddy gave me a rack of elk ribs -any tricks or secrets - do they need to be braised.?

I put some smoke on a rack of Alaskan moose ribs on here a while back. It was not the ideal way to do them. They were ok, but too lean for smoking (and not very meaty either). If I ever have another rack I'll surely braise them.

If you want the moistest way to cook them itll be some variation of: sear > sv > sear or sv > sear.
