Crappy weather on tap, so red beans and rice made from leftover twice-smoked ham.

Happy Phriday and weekend to Phu and crew and all y'all Pharkers!

I trimmed up three nice rack's of spares into St. Louis cuts and the Shirley Fab is rolling thin blue smoke on them while I make up about ten pounds of fresh Kielbasa to join the ribs for the last hour or so.

Happy Phriday, Pholks! SWMBO and the boys enjoyed the NY Strips so much last weekend, that I was forced to grab another pack before the sale ended Tuesday. Where the fire comes from is completely dependent on the weather.

Saturday afternoon if the weather is decent, I think the Weber Pizza attachment will be coming out. toss a full stick of pecan to get a better "woodfire oven" feel to it.

Sunday THERE WILL BE SMOKE....
-I have a little 5lb bone in butt going on in the morning
-Going to throw a pork belly on the bottom rack to make bacon for the first time
-Thinking a 2-3lb ribeye roast for a nice dinner (keeps the wife happy and the smoke flowing)

Thawed out a butt yesterday. I was really hoping to have a new smoker this weekend, but due to supply not meeting demand, looks like im using one of my charcoal smokers.

Planning on a pot of comfort food. Not sure what will be in the pot but I want it to last all weekend.

Have a great weekend Phu and Brethren!

I was bored during a conference call, so I started early!

Not sure what will go on this weekend, just trying to dodge the rain.
