I am absolutely not a pro but I think you need a better shaker. As you were shaking on seasoning and saying "make sure you spread in nicely" you were laying down piles of seasoning that you had to rub around and spread out instead of sprinkling evenly. You had some good tips!

Good eye, you caught me I didnt realize until the camera was rolling I only brought out the top of my spice grinder hence no spread haha
