I've got some in the fridge marinating to drop in the greasefor lunch but those look great! I'll have to try "frying" some your way next time.
 
Marty, looks great, I just happened to do some yesterday myself. I egg washed with some seasoning then flour and corn starch dredge into the fridge to set for a couple hours. I have to say these came out better than any fried I have ever done. Still crispy even after saucing an hour later.
