Default Tuning in from CT

Short-time lurker here. Originally from Alabama but now living in Connecticut. Been smoking on a 18” Kamado Joe for a number of years but I’m tired of the limited real estate on the KJ so I’m planning to add a horizontal offset smoker. Probably, I’ll start at the low end with a OK Joe Highland and do the usual mods.

Anyway, enjoy smoking just about everything from brisket to pork jowel. Just eager to have some more surface area to work with.
