Cold, wet and spitting snow.
Perfect day for a pot of chili.
Onions, tomatoes, green peppers, garlic, Anaheims and Serranos.
What could be better?

Seasoned up with Adobo, cumin, red pepper flakes and black pepper.
Let it simmer a couple hours, should be ready by half time.

I make veggie chili when the daughter is home. I braise the meat in the oven and the rest of us just add it into the bowl.
Beef flavor doesn't permeate, so not quite the same, but it's "plenty good enough" and everyone's happy
