Default First smoke on my BPS UDS - Beef Short Ribs

I just finished putting together and seasoning my Big Poppa Smokers UDS kit last weekend. Wanted to try something different on her inaugural run so I went to the butcher and found some beef short ribs. Haven’t cooked them before. Just wanted to share some pictures of my new smoker and how the first cook went on it.

I was very happy with the performance of my new UDS. I didn’t have to adjust air intakes at all to maintain between mid-240s to mid 250s the whole cook. I used Meatheads Big Bad Beef rub. I did the 3-2-1 method on half of them and wrapped with beef broth. The other 3 Dino bones I left unwrapped and cooked for 6 hours. Due to time constraints I was forced to pull the unwrapped ribs a little early, they had an internal temp of 195. Some fat was left unrendered on those but the meat was still super tender.
