Default First pork butt smoke.

Nice 8 lb butt, a couple racks of ribs. This is the first time I have gotten up in the dark to start the process. It's fun..feels somehow clandestine.

Tab Benoit- Must listen to this artist. A cross between southern blues,Stevie Ray, and Louisiana cajun. Great listening while having a brew and tending the stick burner.

Usually don't wrap them in foil, but it looked like they were going to get a little dry if I did not. Two more hours in foil and the 'test ribs' were perfect.

If you go to the Dr, I think they can give you a cream for that issue.
