Default 15 1/2 Brisket Cook

14 pound prime brisket from El Cortez meat market in Norwalk CA. Cooked at 225 and wrapped in butcher paper. This time using just salt & pepper. No binder. Ended up leaving more fat this time, tradeoff. more juicy, The downside just a little too fatty, problem solved when trimming the brisket up after the cook.

15 1/2 Brisket Cook

El Cortez sources from Creekstone Farms right? Only ever cooked one but dayum it was good.

What did you think of just salt/pepper? If smoked using firewood it usually turns out pretty amazing!

Hi Robert,

They never seam to have Creekstone. The have some Omaha prime brand. I want to try a Creekstone packer. I once got a snake river farm Waygu and found it way too fatty. Do you know where in LA I can get a Creekstone? I am now sticking to Salt & Pepper on brisket. May ad a bit of Lowery's next time.
