I cooked 12 kg of St. Louis ribs yesterday for about 30 guests, in my Pit Barrel Cooker which I bought a few years ago. Location was near the northeast shore of Lake Ontario, 305 ft above sea level, at the entrance to the St. Lawrence river.

I have done this twice before, but this year I think I got the best results to date. I might take the ribs off a little sooner next year.

I need to find a type K thermocouple that has a probe approx. an inch long. The probe I have now is 6" long. The logging instrument I used is now sold as the Thermoworks ThermaQ Blue, but I think it had a different name a few years ago. I powered the iPad and ThermaQ with two 20 000 mAh USB power bricks.
