Butts are off! Way faster than ever before. But i'd rather hold longer than be late.

The early brisket is on and the other 2 in an hour or so.

Well so that didn't go as planned. So shortly after my last post a couple of guests arrived hours early and they were not even on the invite list. But they are old friends so what ya gonna do right? And bey that evening we had lost our internet for about a day. We were expecting 74 the numbers bumped up to 95, So I threw on a bag of chicken quarters as well. Also I could not find my butcher paper so I resorted to foil for the brisket. So sorry for not keeping the post up to date. Didn't get all the pics I wanted, but here are the rest of them. Nothing plated, no tater salad shot, no cornbread shot and no chicken shot. I was pretty busy running the line. Oh well.

There were a lot of unexpected things on Saturday, but all in all it turned out great and everyone had a good time. We ended up with about 25lbs of pulled pork leftover. A problem I like to have.

Frying up some home cured bacon on top of the FB.

Getting the beans ready.

Beans and brisket on the smoker.

Birthday boy enjoying his cake!

Brisket. The only shot I got of it.

Thanks for looking!
