What's the verdict on the dry brine vs not? I found chicken in the PBC to be juicy enough without a brine, but was thinking of doing a dry brine for a turkey.

Missed the latter part of your question. No doubt it'll be better on turkey.

Thanks brother!
Nothing special, just baby backs and wings. I'll try and get a few pics along the way and definitely a finished pic..

Coming along pretty good. I think after the first batch of wings are done I'm gonna flip the grate and wrap the ribs in foil. Haven't done that in a long time so why not..

All finished. Man these ribs and wings were good. I would say the best I've made but I think it's just that I haven't made them in so long. Here's a few pics. Not great but I was hungry and almost forgot to take the finished pics...
These pics don't do the ribs and wings justice! Oh well I'm rusty at taking food pics....

Thanks! I just realized I should have taken a pic of the other side of the ribs. I got really good pull back from the bones. Unfortunately you can't tell from the side I took...

I can see the pullback at the bottom. That's good enough as I don't like too much pullback. Usually happens when you leave it in foil too long.

i've been using my PBC but haven't posted in a while. Thanksgiving turkey was a success again.
did 3 racks of babybacks yesterday with a chunk of cherry wood. half basket did the job and still about 1/3 of the coals left after the 4hr cook. no wrap, just sauced about the last half hr. they were great!
