LOL!
My first thought was that Cowgirl probably has some Cornish hens that she raised from eggs and were fed nothing but aromatics, truffles and caviar their entire lives waiting in the freezer!
I volunteer to be the taste tester!

For real. Challenging someone who processes their own hens is like challenging Lebron James to one-on-one.

Thanks guys.... Too funny! lol
I DO raise my own game hens and flavor them while "on the hoof".

This batch was garlic, scallion and ginger flavored.

They're pretty tasty.

I'm waiting for the Unicorn TD. Not because I want to smoke a Unicorn, but I have to see the one that Cowgirl raises...

So I bought some Cornish "Eagles" for Sunday night's game. I brined them and was already to go until our 1"-3" snow forecast turned into 12". I roasted the birds in the oven and, after a scary First Quarter, watched the Saints make their way to the Division Championship next week against the Rams.

Oven cooked birds don't count, so I'll try again later. However, it looks like next weekend could be worse...

I couldn't find that exact picture, so I settled for what I posted.

I've been looking for some chickens harvested at that low a weight. Less than two pound chickens are hard to find.

I cooked mine, but somehow lost the "Money Shot"
Have pics of the cook, but not the final plating.
I'll go ahead and enter tomorrow to get it going.
