Scotch Eggs!!

Made with eggs from our chickens and ground pork from the 1/2 hog I bought a few weeks ago

Seasoned with Q-Salt and Smoked with cherry wood

Yes. 2 minute egg.
Cool then peel and wrap in sausage of your preference.
Smoke low and slow until sausage is done
 
Nice, the color and thickness of the yolk tells the whole story.

I tend to use city eggs when hard boiling just because older eggs work better and peel easier, but I sousvide farm eggs for that same finish you achieved for breakfast..... another item on the bucket list.
 
Very, very nice. Would try that if I wasn't certain I'd overcook the yolks.

What's the timing in that project?
 
What's the trick to the eggs? never had a soft boiled yet before


I usually use sous vide to make perfect poached, or soft boiled. If you want the white completely firm, then like OP said, 2 minutes boiled to firm the white enough to wrap.
