The smoke wood: Pecan
The rub: Gold Bar BQ First Place Chicken Rub
The Chicken: Foster Farms Whole fryers @ 4.75 lbs each

Those look great.

May I ask, what things did you do specifically? Add oil to skin before the rub? Temps and times? Do you add sauce at the end?

I ask because my results have not been consistent. Maybe I got the egg too hot and that caused the skin to burn. It eats well, but mine does not look that pretty.

The Egg'd bird didn't need flipping as it was done first, the drum bird did get flipped to crisp the skin (and it was still rubbery).

I preferred the Egg'd bird!

On the flip side, I prefer not spending $800 to cook a $5 bird. There's a place in the world for everything, I reckon. You can buy it done or build it done, but either way, it is time to eat. :p

did you know you didn't have to throw out the egg after cooking one chicken?
 
Curious what size UDS you cooked on. The photos make the grill look like its pretty deep in the barrel- on a 55 gallon it would appear that you are only 19" above the coals. Do you have 24" from grate to basket?
I don't think I have ever flipped a spatchcock but I may try it.

Edit- so this is where Dumb comes in!! I just reread and saw (mini) this time. .
