4 rib prime rib rubbed down with SPG, put on the MB560 @ 230 deg till it hits 125, then I'll crank it up to 500 or so to sear the outside and give it that nice crusty look. Got rice pilaf waiting in the wings and homemade rolls proofing in the oven. I'll make up some au jus later and we'll dig in
