Grilled Cactus

Again.
This time I went with a couple of different fillings, shrimp and a home canned wagyu burger mix.

Picked up some cactus pads at the store. Burned and scraped the thorns..

Scraping inside of a plastic bag helps contain the mess.

Cut pouches into the cleaned pads..

gathered filling ingredients... grilled corn, garlic, shallots, scallions, cactus, asadero cheese, cilantro...

sauteed the onions, garlic, cactus, scallions in butter...

added the grilled corn and some black beans..

Divided the mixture in half and added a jar of the home canned beef to some.

Gathered the stuffing ingredients. The beef, cactus, corn, black bean, onion, garlic mix.
Some shrimp, and a bowl of the stuffing ingredients without beef.

Onto the grill with indirect heat.
I turn the pads over when the juices start bubbling from the cactus.
Cooking the cactus on both sides.

While the cactus pads cooked, I heated a pan of home canned hatch chile salsa..

dipped some tortillas in the sauce, topped with cheese, onion and cilantro. Fried til crisp.

Sliced around the "lid" of the stuffed cactus pad..

Peeled the lid back and supper was ready..

I liked both the beef filling and the shrimp. I didn't have a favorite.

The whole post is obviously amazing, but I laughed so hard at this sentence. If I read it anywhere at all, my first thought would be "that belongs on the Cowgirl blog"

I have never had the opportunity to try that, but, first chance I get, I am all over that!!
With your cooks the pictures tell the story and that is usually a very Happy Trail!!!
 
DAYUM!!! That's a heck of a first thing to see when I logged on this morning! Very impressive Jeanie! Looks and sounds delicious! :clap2:
 
With a little research I discovered that some varieties of opuntia (prickly pear -- nopal) are hardy down to -30f. Now I am going to have to plant some. I had a few large specimens when I lived in SoCal, but never considered it to be a climate hardy plant. Wrong again. Never thought to stuff it, only ever added to soups/stews/casseroles. You're a rock star Jeanie.

To answer Chris - what does it taste like: hard to answer, maybe a little bit like a green bean. You can find it jarred, in strips, in the Mexican section of your grocery store, or better, a Mexican market. It will be called 'Nopales'.
 
What a cool and delicious cook. Not too many pics at all rather a little journey we are taken on. Never considered cactus but, heck if I run across some this will surely be stuck in my head and make me want to try myself.
