Default Smoked Chicken Salad

Had some left over chicken breasts that I smoked up in the UDS last night so I whipped up some smokey chicken salad. Mostly chunks, but some finely chopped to give a mix of consistency. Celery, red onion, red grapes, tarragon, pepper, & only a pinch of kosher salt. (I didn't want to overdo it because of the sodium in the rub). Mix it all together with some mayo & let it sit in the fridge till dinner.

Indeed. I'll have to try that one. Never tried making a chicken salad with sweet ingredients, save for onions.

I make smoked chicken for primarily two reasons, salads and soups.

Oh yeah, that is one of my favorites. Poultry picks up the smoke realy nice. Just gotta be careful not to overdo the smoke. Smoked chicken or turkey soup.... crazy good!
