Default Unknown cut - Chopped Beef - Pron

Thanks for everyone who helped me try to identify that cut - I can tell you it had a bid ball joint in the middle

Smoked to 185 - then braised in a aluminum pan and some beer until it hit 205 - then wrapped in butcher paper and let rest in my cooler for a few hours

Chopped it up - sandwiches and Mac n cheese - was really good

Nice cook! And if not mistaken, a new smoker?

Have had it for about 4 months - about my 8th cook - starting to get it dialed in

Did you manage to find out what cut it is?
Looks a bit like steak on the bone, but the bone seems a bit too thin for that
Looks tasty though ;)

I cut it off of the shank - so either the front quarter (bone in partial clod) or the hind quarter - bottom round - based on the fat content, thinking it came off the front quarter

Always like trying how to cook different cuts of meat
