Pork Steaks on the FB
Decided to toss some thin pork steaks on the Fornetto Basso this afternoon...
meat with a little binder and rub Loaded charcoal tray using a mix of the 2 briquettes, probably 3ish lbs. total I lit it with 7 lit coals. It took about 30 minutes to get going and stabilize around 250. And I noticed how different the FB temp gauge is from the Inkbird...FB below Inkbird, at grate level right below the dome thermometer 1st baste, about 3 hours in 2nd baste And it got dark out so here's the end result...

Man, you've been doing some great cooks of late. Those steaks look good. I have a WSM and have noticed for years now that the dome thermometer has always ran cooler than the actual grill temp no matter what unit I was using. Once I knew that it's about actual grill temp it really improved my end product. I only use the dome stat to judge if temp is rising or falling in the pit.

One last pic to add, just for documentation's sake. In another thread, someone was curious about fuel usage. I shut the smoker down after a little over 6 hours at 250ish. This is what was left in the basket.
The ash did pile up pretty heavily on the bottom vents.

I'm not familiar with that cooker - looks great! I am, however, familiar with pork steaks and I love love love 'em. Very nice job you did there - they look fantastic.
