i am paying $1.43/lb right now from my wholesaler, 60% yield is pretty average. i was charging $6/lb when i was paying .85/lb. At $6 i was turning a profit, but almost no money for my time. all the other restaurants here are getting $9.99-12.99/lb. i went up to $8.50/lb or 2 lbs for $15. and by the way, dealing with the HD and the county sales tax people is the only part of this business i hate. hope this helps

I would also do quality control by freezing a bag for a month, then eating it myself, if I don't like it others probably wont, slap on a use by fresh/frozen date, and let word get around. I am a huge fan of samples by the way lol.
