Not really "wrapped" but vac sealed then sous vide. Been having some cold temps (<45) so I took advantage. Cold smoked two chuckies on my drum using the a-maze-n tray. Rubbed with EVOO and then SPOG. Then I vac sealed it and sous vide cooked them for 52 hours @ 140.
It was the best chuckie I have ever are.
