Default Little slow, Thought I add pics of Pioneer Woman's Fajitas

They REALLY are THAT GOOD!! Bear with me on the pics.....


This is a veggie grate I got a Kmart 20 years ago at least.
Well seasoned, that gray on the right is lighting. This thing is black coated.
And Awesome. Heat the heck out of it to get that sizzle - and char.
If you Dump too much in at too low temp and it gets mushy - do one round at SUPER high heat instead. And the meat is super high heat as well..



I throw the veggies in my basket first at super high heat.









HOT I SAID!


MEAT ON, I slid the veggies to the other side and threw on Flap meat.








YES!!

This is no lie, these are killer, and easy. I use FLAP instead of flank, if I used Flank I would be tempted to slice lengthwise to make it thinner.
I am finding cheap Flap at Latin bodegas here, $4 maybe a pound. I have to skin the Silver Skin, but I don't mind. I like Playing with my meat!!
I can find SKIRT which works perfectly as well, but about $8 a pound here.


Oops, here is the recipe. Her blog is... well, long winded:)
Beef Fajitas

March 4, 2013 416

Prep Time:2 HoursDifficulty:EasyCook Time:15 MinutesServings:8 Servings
Ingredients


  • 1 whole Beef Flank Steak
  • 1/2 cup Olive Oil
  • 3 Tablespoons Worcestershire Sauce
  • 1/3 cup Lime Juice, Fresh Squeezed
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder
  • 1/2 teaspoon Red Pepper Flakes
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 Tablespoon Sugar
  • 2 whole Medium Onions, Halved And Sliced
  • 1 whole Red Bell Pepper, Sliced
  • 1 whole Orange Bell Pepper, Sliced
  • 1 whole Green Bell Pepper, Sliced
  • 1 whole Yellow Bell Pepper, Sliced
  • Oil, For Frying
  • Flour Tortillas, Warmed
  • Cheese (grated Cheddar/jack Or Crumbled Queso Fresco)
  • Salsa
  • Sour Cream
  • Cilantro Leaves



Instructions


In a dish, mix together olive oil, Worcestershire, lime juice, garlic, cumin, chili powder, red pepper flakes, salt, pepper, and sugar until combined. Pour half of the marinade into a separate dish. In one dish, place the flank steak, turning it over to coat. In the second dish, place all the veggies, turning to coat. Cover the dishes with plastic wrap and place in the fridge for at least 2 hours.

Prepare tortillas, salsa, sour cream, and cilantro.

Heat a heavy skillet over medium-high heat and drizzle in some oil. Add the veggies and cook them for a few minutes, until they're cooked but still slightly firm and have nice black/brown pieces. Remove to a plate and set aside.

Heat the same same skillet (or a grill pan if you have it) over high heat and drizzle some oil. Cook the meat for about 2 minutes per side until medium rare. Remove and allow to rest on a cutting board for 5 minutes.

Slice the meat right before serving and serve with all the fixins. Delicious!

Sea K, I have no words, one of my favorite leftovers - I heat the skillet hot as heck, and toss the mix for maybe 30 seconds. The smell is amazing.

The fajitas look great — I’ll definitely try the recipe. Thanks for sharing!

It is amazing what she has done for Pawnee, Ok. I have driven thru there for years on my way to visit family in Bartlesville and it’s always been a fairly deserted town with shuttered buildings, etc. On my way thru in summer 2017 I saw a couple parked buses and a three-block line of folks outside a business. Stopped to check it out and they were tour buses and tourists lined up to eat at her restaurant. 2-hour wait. Walked around a bit and found many new shops and restaurants that have opened because of all the folks she brings to town.

She pretty much single-handedly rejuvenated that place and I understand she’s renovating another deserted building into a hotel. Really remarkable!!

I think you mean Pawhuska, OK? We went through there when she opened up her lodge (where the film the show) and my wife wanted to go see. Was pretty cool. We headed on to Bartlesville afterwards and stayed in the Price Tower...what an experience, with both of us being FLR fans. Really liked the town, made me look at Phillips 66 to see if there were any compatible openings, haha!

I should say if your meat is large, cut it smaller, you get more char and Maillard on any edges.

Yes, you’re right, sorry! It is Pawhuska, Ok.

Pawnee is a little SW of there, where Pawnee Bill’s ranch is located and they raise buffalo. Sometimes I confuse the two because they’re alternate routes from my hometown of Stillwater to Bartlesville.

If you ever get back up to Bartlesville you should drive another 30 min or so to Coffeyville, Kansas. They have the spots marked where each of the Dalton gang was killed tryin to rob two banks simultaneously (supposedly trying to outdo the James brothers); still bullet holes in one of the banks.

on edit it goes without saying to strain the meat and veggies before throwing on the hot basket or grill....
and no one will complain if you only have red or green or orange peppers....
it's a basic flavor concept.

Look what I found in my shed, bought years ago.



Could not get Flank or Flap so got some heavy marbled top sirloin.
Soon know if that works
