Default Beer Can-less Chicken & Some Roots

I’m sure by now most of you know that Beer Can Chicken is lame and overrated, not too mention a waste of beer.

However the vertical stands they made for this purpose do have a use......

To hold your chicken [emoji215] in a vertical position (don’t need no stinking can)

This is my favorite way to roast a whole chicken (Turkey too)

Started by dry brining a 6 lb bird with Harvest Brine

After a few hours chillin’ in the fridge, the bird is ready to cook.

Onto the stand

I set up the 26” Weber with 4 charcoal baskets and a hunk of cherry. The rainbow carrots also went on.

Pulled it when the dark meat hit 180

That’ll do.

Clean-up on aisle 5!!

The stand

The chicken being disassembled.

Plated with Garlic Mashed Yucca and Roasted Rainbow carrots 🥕

Yucca is a root veggie similar to a potato, but a little sweeter IMHO.
Takes about 30 minutes of boiling to make tender, from there it’s like making mashed taters

Pretty looking bird there John, nicely done.

I have a couple of those stands that I regularly use, I spray them with PAM prior to inserting them into the bird and cleanup is a breeze.

Wow that is a beautifully cooked chicken John, the color is perfect!

Love your dry brine on whole chickens, use it when I do rotisserie especially.
