I just use a knife and keep my fingers out of the way . My slices aren’t that thin.

I agree, if you have a good knife, your knuckle is the guide.

But hey, tools are fun to use, if it takes up too much room, or doesn't work well, just pass it on.

Fortunately, neither my wife nor I have a "culinary tool addiction." Probably have to have a 1,000sq.ft. kitchen if we did!

Besides, all the really great cooks I've ever known seem to like an old school way of doing things, not only in utensils but also the simplicity of their food. The flavor isn't simple, though. They know how to shape the flavor of their food because of their own great palates and familiarity with herbs and spices.

I bought the same one a few months back. My knife skills suck was the reason I bought it. It works is all I can add to the conversation.

Also, don't forget that an apple corer through the center of the potato makes a great way to stuff and flavor the potato with a lot less effort. Just cut the ends from the removed center of the potato to make a plug for each end.

Stuff them with cheese, sausage, vegetables, you are limited only by your imagination.

They can also be wrapped in bacon of you desire.

These are called "Potato Bombs"

I just put the tater on a wooden spoon. Just deep enough to keep you from cutting all the way through.
