Very nice! And I'm with ya on CI/bacon grease. As much as I love grilling/smoking everything, the CI is great for burgers, steaks, etc.

Yes, I add ground fenugreek to the dry brine.
I´m still experimenting somewhat with the amount but this one had 1 TBS per kilo of meat and I think that´s the best so far.
It gives the bacon a flavor much like maple syrup but without the added sugar.

Absolutely, for steak and burgers, it´s hard to beat a nice sear from hot CI. And bacon grease is just a big bonus.
