Must have Had some beginners luck on my first cook, very easy to keep a clean fire. Humidity today was much higher, 60-70% compared to 20% on first cook, boy what a difference that makes! I don’t know how you guys in the humid south keep clean fires. Thank GOD for my weed torch, was able to use it to get the fire going a few times when it started to smolder and minimized the dirty smoke. First cook was tough to keep temps below 300, today’s cook was tough to keep above 250.
Smoked a pork butt from Creekside, man did it turn out good! Same recipe i’ve Used 7-8 times on my pellet and by far the best; even with fighting the dirty fire. |

Flavor and texture blew away my pellet. I love my pellet, but I tried all the pellet tips to get the real wood smoke flavor and the only way to get it is by burning sticks.

I appreciate the direct answer! Before I went down the offset path, I was eyeing a YS640. Beautiful smokers. I know the offset is going to be a lot more work, but I'm hopeful it'll return great results like you're getting. Thanks for the insight.

How long did it smolder when adding a stick? Sounds like splitting them in 2 might help. 2 small sticks light quicker than 1 big one.
