First cook on Assassin 24

First use of the new smoker my gravity fed Assassin 24 I did a fatty. Stuffed with mascapone, green onions, and Csuliflower rice, seasoned with Oakridge BBQ SPOGOS which they are having people test with. I find it works great with fattys. I also did two slabs of st Louis style ribs, and a 10 pound pork butt. Food pr0n ahead. Ribs and pork butt I used my own rubs I make using Swerve brown sugar and the regular Swerve. Used paprika sea salt which I find during those home goods runs we all have to endure.......

Well, i put on four pounds, eating 2 racks of ribs and mountains of pork. Oh well! All for me, sooner than later my son will be old enough to start eating. Was able to get the baby mom to eat some pork, she liked it. Had great color IMO.
 
looks like you already got it mastered and food looks great .
