I don’t do brisket often or well.

I’m pretty happy with this one

7am to 3pm at ~275F, with a 2 hour hold. It was a small brisket (10.5 lbs before trim)
 
Man that's a great looking brisket and sandwich. I like cooking that size brisket.

Looks great. If you have trouble cooking briskets, perhaps you are forgetting to season it with salt before cooking. You're welocme!
