Question for folks who have worked a concession trailer or food truck with equipment, is make up air required or is there significant benefit of having it? I plan to have a 36” flat top, two pot countertop burner and one fryer. This will primarily be a BBQ truck; however, I want flexibility in the kitchen. Should I skip the make up air or add it?
