Default Brisket and Pork loin. Live cook

I picked up 17lb prime packer at Costco yesterday. It was $5.49 per lb. I normally I would not have spent that kind of money on a brisket but some of our summer staff are leaving at the end of the week and I promised a brisket this summer. So I just went for it. I also had a hankering for some pork loin. So I picked up a loin at Costco as well. Thankfully that was cheap. Years ago when I first started smoking meat I used the BBQ bible pork loin recipe several times but moved on from that. Today I feel like doing it again so nostalgic reasons. So I will.

I was planing on cooking the brisket on the drum and the loin on the kettle later today but the drum was burning dirty and not wanting to come to temp. I think that being at the bottom of the my charcoal bin is what killed it this morning. Too many small pieces not allowing enough air flow through the basket. I have more charcoal coming today but the truck does not arrive until this afternoon. So I got the offset fired up and hard charging at 325. Brisket is on and the loin will go on later this afternoon.

I feel your pain on the brisket, over here in the bay area we were seeing 5.99# just outrages... back pork ribs are still like $54 a pack... this is also costco. I haven't bought brisket or ribs in a good while... apparently the butcher at costco was telling me the docks here are short handed and they cant unload the boats quick enough causing lots of demand. Boats have been sitting in the water waiting for weeks to unload. I'm excited to watch your cook! I'm very curious about your pork loin. I've been wanting to try a full one from costco for awhile.

The prices were a dollar lower at our Costco 6 weeks ago. I stopped by the local butchers shop before heading to Costco as I usually do. I prefer to support the local guy and the product are usually quite good. But yesterday the briskets that they did have were small and looked awful. And the loins were small as well, with about a third of the weight untrimmed hard fat. So of to Costco I went.

So 4.5 hrs in and the flat is 160. The color is not where I would normally want it but I’m under the gun for timing right now. So not only am I wrapping earlier than I normally would but I’m going foil instead of paper. In a couple of hours I’ll start the pork loin.

The pork loin is on. Of course I felt compelled to deviate from the original recipe. Laid the bacon weave. Butterflied the loin. It was the ugliest cut I’ve made in a long time. I’m out of practice. Then splashed it with some Jack Daniels, slathered it with some brown mustard, sprinkled some rub on the inside and trussed it back up. Another splash of JD and coating of tub on the outside and off to the smoker.
