Default Tri-Tip Reverse Sear - PRON

I was at Costco yesterday looking for something to cook. On a whim, I purchased a pre-seasoned Tri-Tip.

I preheated my Louisiana Grill and put the Tri-Tip on at 250. I smoked the Tri-Tip to an internal temp of 110. I then took it off the smoker and let it rest and based it with butter before searing it.

I turned the smoker up to 600, the max, and on opened bottom panel to let the flame roar. At 600, I put the Tri-Tip over the flame for about 1 minute for both sides.

I took it off the grill and let it rest for about 15 minutes.

Before cutting it, the internal temp was at 125. I cut it across the grain and it came out a perfect medium rear. The flavor was amazing. One of the better steaks I've had.

From starting the smoker to taking a bite, was around 2.5 hours. A very easy item to cook in a very short time. I will certainly do this again.
