Default Smoked Turkey Enchilada Casserole

I have alot of vacuum sealed smoked turkey legs and thighs and use them alot in beans, soups and pot pies. I decided I wanted to make a Enchilada Casserole with some of it, I usually use shredded beef for this recipe, but this turned out fantastic!

My wife makes this with ground beef and I use her recipe as an idea/guide. I usually make this with shredded chuck, but pulled pork, chicken or turkey can be used.

I don't have a specific recipe, but this dish I simmered the turkey in a combination of tomato sauce, tomato paste, small can of green chilies, onion, can of Rotele', little water and seasoned with cumin, lots of black pepper, garlic, chili powder and salt to taste.

That was made with crumbled Italian Sausage.

I too have a similar recipe. I prefer to add a cream of chicken (or shroom) soup to the sauce.

I've used tortillas, but my favorite is to simply use tortilla chips. The chips help give it a little crunch...sorta like a big bowl of chilli nachos.

Looks great...one recommendation. In a heated skillet with some canola oil, fry each corn tortilla for a few seconds (they'll start puffing up..get it out). Then layer it - tortillas, filling, cheese, repeat!

Braising those legs is the ticket (I will pressure cook them for 5 or 6 minutes too) to making it shreadable.
