Default Smoker experiment

Made some changes to the smoker and doing a test run before its time to load it up for Christmas. Was surprised brisket prices have dropped at Costco the past couple months. And anytime the smoker is lit might as well add some pork.

It’s kind of a weird color. Actually a really light pastel mint green. I have to manipulate pictures to get it to show up correctly. This is a pig from last weekend at a cook for the LSU football team.

Took some work, but getting the exhaust damper in the right spot and now no deflector/baffle from the firebox has it running pretty good. One probe directly behind the blocking log and the other all the way at the end of the grate.

We will see how the eats are. Everything is still resting in the warming cabinet. All that’s left is to smooth out where the deflector used to be. Hoping it doesn’t affect my turkey breasts cook. Was able to get really good color out of this pit with the deflector in, we’ll see how it does now.
