Default Smoked and braised lamb pitas

The wife and I go to a restaurant that makes a lamb pita with pesto, so I thought I'd come up with my own version. I came up with this. Semi-boneless leg of lamb and a few seasonings.


Into the pellet grill at 350*.


While that starts, I pulled the ingredients together for the pesto. Basil out of the garden, pine nuts, garlic, olive oil, and parmesan cheese.



With that done, I started a sweet potato pie.


With that ready to go in, I pulled the leg out and got the braising liquid together.




Back in at 375*.


The pie is ready.


And then the leg of lamb.


Pulled with some tomato, onions, and pesto on a pita.




A piece pf pie and a good beer to top it off.



This qualifies as some delicious comfort food, so I guess I'll enter it in the TD going on. Thanks for looking, and enjoy the rest of your weekends.
